
A dozen eggs. Although the first thing that comes to mind when writing this month's blog is all of the pregnant women around me, I feel that none would be too keen on me posting pictures of them! So, instead I am going to share with you all my gluten free French Toast recipe! Every morning I eat an egg. Whether it's in French Toast, an omelette, or an egg sandwich, we go through at least a dozen eggs a week. I always eat egg whites (got into the habit in high school and now dislike and get indigestion from egg yolks) and try to buy organic, when they are reasonably priced, because they taste better - which is probably why we go through so many :) So, as you can see in the picture, I use Rudi's Gluten Free multigrain bread (it's a happening new brand!), organic 1% milk, an egg yolk, and cinnamon...oooh love the cinnamon! Keep the bread in the fridge until use, and then microwave two pieces for 20 seconds. While this is microwaving, heat up a pan with olive oil. Then crack the egg, keeping only the white, add 2 splashes of milk (ah so systematic of me), and then, beat with a fork. Then, add cinnamon. Place the bread, that is now hot and ready for action (wink wink!), in the mix, flip, and place on the pan. Yum! If I don't eat it plain, I put fruit, like raspberries or bananas, agave syrup, or yogurt on top. Prijatno! ~A
